Santa Barbara consists of five sister farms, including the well-known San Pascual and Agualinda farms. They are especially famous for their progressive approach and experimentation with dry processing and cold fermentation. Dry processing is very rare in Colombia, as high humidity throughout the year makes this approach difficult, and creating a quality “natural” requires large financial and time investments.
