Beautiful coffee coming from El Triumfo farm located in Copan region in Honduras. The owner, Ms Yolanda Urrea Arita believes the key to the quality is to grow coffee in synergy with the environment . Their farm is bio-dynamic and fruit trees cover most of the farm area.
Coffee cherries form this microlot ferment in the barrels without oxygen for 72 hours. The temperature is controlled and kept around 22 – 25 degrees. After fermentation the cherries dry on raised beds for 20 – 30 days.
