At El Rincon, coffee cherries first dry ferment for 18 – 24 hours and afterwards are washed and sorted in canals. After thorough washing, the beans go into a clean water to soak overnight. This step is very common in Africa but is very rare in Guatemala. Thanks to this process this lot acquires a very unique flavour profile.
